Living the Dream in Retirement

Always up for anything garden-related, my visit to this Palm Springs botanical garden was an opportunity to see more Cacti varieties than I knew existed.

Established in Palm Springs since 1938, this privately-owned arboretum was created to share the beauty and extraordinary varieties of desert plants with everyone who visits. The featured desert trees, plants, and cacti come from around the world and range in size from miniature to giants!

The Moortens are desert plant specialists and invite you to their residence estate. Moorten Botanical Garden is a living museum of desert lore and has something of interest for everyone with glistening crystals, colorful rocks, ancient fossils, and pioneer and gold mining relics.

The classic collections on display are comprised of more than 3000 varieties of plants designed in concentrated habitats along a nature trail. In the world’s first Cactarium (a word coined by The Moortens), visitors will discover a special exhibition of rare plants seen nowhere else.

One afternoon my sister and I headed out to explore this sculpture garden. It exceeded our expectations natural beauty in a peaceful setting – plants, trees, water features, rock formations and of course the sculptures. It was the definition of Zen.
My favorite sculpture “Walks Among the Stars” is worth photographing from several angles.

I’ve rarely seen flamingos so when I had the opportunity I had to capture the moment in photos.

I had a special afternoon enjoying one of our beautiful national parks this week. Staying in Palm Desert, Joshua Tree National Park was about an hour’s drive and such an incredible place to visit. With so much in the news regarding the administration’s disruption to our national parks it felt especially poignant spending time there.
Our national parks are a treasure and should be protected and valued.

Tonight I was inspired to put together a dish by items on hand and the fresh herbs I recently planted. The result turned out so good I felt compelled to do something Spence always asked me to do. He would compliment me on a dinner I’d prepared then say “are you going to write it down so you can make it again?” Of course, I would say “I’ll remember”.
This was delicious enough to make me write down exactly how I made tonight‘s dinner if for no other reason than I want to have this meal again.
Pancetta and Fresh Herb Spaghetti
1-2 servings
1/2 lb spaghetti
5 oz diced pancetta
1 shallot, sliced
1/4 c chopped green onions
1 diced tomato
Chopped fresh herbs – I chose Basil, Thyme and Flat Leaf Parsley
Toasted Pine Nuts and Sliced Almonds
Olive Oil
Fresh Lemon Juice
Salt, Garlic Powder and Ground Black Pepper, to taste
Bring salted water to a boil, add pasta and cook for 10 minutes. Drain the pasta, drizzle olive oil over top and set aside.
In a sauté pan, cook the pancetta over medium heat until browned, remove from pan onto a paper towel to drain. Pour off and retain the rendered pancetta fat.
In the same sauté pan, add the sliced shallots and cook on medium heat for 2-3 minutes, adding 1-2 teaspoons of the rendered pancetta fat. Remove from heat.
In the bottom of a large bowl, place the shallots, green onions, thyme and a drizzle of olive oil. Place spaghetti over top then toss until mixed. Add the pancetta, tomato, basil, parsley, salt, garlic powder and pepper. Toss to mix. Drizzle a bit more olive oil and 2-3 tablespoons of fresh lemon juice, toss again.
Serve in bowls and top with the toasted nuts. Pour yourself a glass of Prosecco and enjoy!

I recently returned from Las Vegas and made my visit to Bellagio‘s Conservatory, which never disappoints. This beautiful spring display may be one of my all-time favorites. Here are the best of the best photos:

This was one of the most beautiful and breathtaking interactive art installations I’ve experienced. Ever since learning about it a year ago it’s been on my list of things I must see.
Arte Museum Las Vegas showcases works inspired by nature under the theme of ETERNAL NATURE. The exhibition incorporates both the natural landscapes and the cultural backdrop of the city. Visitors can also enjoy the ARTE CAFE for a unique teahouse experience enriched with media art. Each piece of artwork delivers not just a vivid visual journey, but also a multi-sensory engagement—from enveloping soundscapes to tailor-made aromas—that amounts to a completely immersive experience.
